It is not a complete history as wikipedia goes into more detail on the different versions of Red Hot Riding Hood and the censorship problems.
"Red" became a famous character appearing in a number of animated shorts. Little Rural Red Riding Hood is an interesting follow-up to the original. Boomerang and Cartoon Network occasionally run the TV versions of these.
